German Berry Cake
Perfect dessert when it's berry season! Quick and easy to make, top it with home-made ice cream if you're feeling adventurous!

  • 1 ½ cup flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 2 tablespoons oil
  • Milk
  • 1 cup berries
  • 1 cup sugar
  1. Preheat oven to 375 degrees.
  2. Sift together the dry ingredients twice (ho ho!).
  3. Break the egg in 1 cup measuring cup, beat slightly, then fill measuring cup the rest of the way with milk. Add to the dry ingredients, add oil and mix well. Spread in a greased 8 inch square shallow cake pan and cover with a layer of berries (raspberries, loganberries or blackberries). Sprinkle the final 1 cup of sugar over the top.
  4. Bake at 375 degrees for 25 minutes and serve hot or room temperature. For an added yum, serve with ice cream!
