Nihads Yummy Yogurt Marinated Lemon Chicken
Delicious served with pita bread and tzatziki, this dish will make your taste buds cry "Opa!"

Ingredients:
  • 6 Boneless, Skinless Chicken Breast - pounded
  • 5 medium Garlic Cloves - peeled
  • 1 Small Onion - peeled and quartered
  • 1/4 cup Plain Whole Milk Yogurt
  • 2 tbsp. Lemon Juice
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Ground Coriander
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cumin
  • 1 tbsp. Lemon Zest
  • 2 tbsp. Parsley
  • 1 tbsp. Olive Oil
  • 1 tbsp. Honey
  • salt to taste
Directions:
  1. Process garlic and onion in a food processor
  2. Add yogurt, lemon juice, spices zest and half the parsley, olive oil and honey
  3. Transfer mixture to a ziplock bag and add chicken
  4. Toss to cover chicken in marinade
  5. Place in refrigerator and marinate overnight for at least 3 hours
  6. Remove chicken from refrigerator and bring to room temperature
  7. Season with salt on both sides
  8. Preheat grill or frill pan to medium high heat
  9. Cook chicken on each side for 3 minutes and remove from grill
  10. Rest for 5 minutes and slice
  11. Sprinkle with remaining parsley and serve
