Nihads Yummy Yogurt Marinated Lemon Chicken
Delicious served with pita bread and tzatziki, this dish will make your taste buds cry "Opa!"
Ingredients:
- 6 Boneless, Skinless Chicken Breast - pounded
- 5 medium Garlic Cloves - peeled
- 1 Small Onion - peeled and quartered
- 1/4 cup Plain Whole Milk Yogurt
- 2 tbsp. Lemon Juice
- 1/4 teaspoon Cinnamon
- 1/4 teaspoon Ground Coriander
- 1 teaspoon Black Pepper
- 1 teaspoon Cumin
- 1 tbsp. Lemon Zest
- 2 tbsp. Parsley
- 1 tbsp. Olive Oil
- 1 tbsp. Honey
- salt to taste
Directions:
- Process garlic and onion in a food processor
- Add yogurt, lemon juice, spices zest and half the parsley, olive oil and honey
- Transfer mixture to a ziplock bag and add chicken
- Toss to cover chicken in marinade
- Place in refrigerator and marinate overnight for at least 3 hours
- Remove chicken from refrigerator and bring to room temperature
- Season with salt on both sides
- Preheat grill or frill pan to medium high heat
- Cook chicken on each side for 3 minutes and remove from grill
- Rest for 5 minutes and slice
- Sprinkle with remaining parsley and serve
