Greek Honey Puffs
Also known as Loukoumades, these fluffy bites of yummy will be the highlight of your meal. Combine these babies with vanilla ice cream and you're in heaven!
Ingredients:
Puffs:
- 1 cup water
- ½ teaspoon salt
- ¼ cup butter or margarine
- 1 cup un-sifted flour
- 4 eggs
- 1 container of salad oil
- 1 cup chopped, toasted almonds
Honey Sauce:
- ½ cup sugar
- ¼ cup water
- 1 teaspoon cinnamon
- 1 cup honey
- 1 tablespoon lemon peel
Directions:
Puffs:
- In a saucepan combine 1 cup water, ½ teaspoon salt and ¼ cup butter or margarine. Stir over medium-high heat until butter melts and mixture comes to a rolling boil. Add 1 cup un-sifted flour all at once; remove pan from heat. With a sturdy spoon, beat until mixture is smooth and comes away from the sides of the pan. Then add 4 eggs one at a time, beating after each is added until smooth and shiny, approximately 50 strokes per egg added.
Honey Sauce:
- Combine sugar, water and cinnamon, heat and stif until sugar dissolves. Remove from heat, stir in 1 cup honey and lemon peel, then cool to room temperature.
To assemble Honey Puffs:
- Pour salad oil into a 10 inch frying pan or electric frying pan to a depth of 1” and quickly bring the temperature to 370 (a cube of bread browns in about 20 seconds). To make each puff, use two spoons to slide level tablespoon of paste into oil, don’t crowd the pan and make sure oil stays at about 370 degrees. Fry puffs until well browned (about 8 minutes) turning if needed to brown evenly. Remove puffs with slotted spoon and drain. Serve with Honey Sauce and chopped toasted almonds. Makes about 32 puffs.
