Tzatziki
Yogurt based garlic spread that's great on pita or for dipping
Ingredients:
- 2 cups plain yogurt
- 2 large cucumbers
- 1 tablespoon minced garlic
- 1 teaspoon white vinegar
- 2 tablespoons olive oil
- 1 teaspoon finely chopped dill
- 1 teaspoon finely chopped mint
- salt and pepper to taste
Directions:
- Put yogurt in cheesecloth-lined sieve over a bowl. Drain several hours or overnight in the refrigerator
- Peel, seed and coarsely grate cucumbers. Drain well
- Add garlic, vinegar, olive oil, mint, salt and pepper to cucumbers and mix well
- Add drained yogurt and blend
- Serve with pita bread, crackers, or layer on toasted olive bread to enjoy

Suggestion: This recipe was pretty acidic, next time I'd eliminate the vinegar.
Blurb: The only time I've ever had Tzatziki was on gyros. It left me wanting another gyro when I made it this time. This is a great dip that I enjoyed with pita bread and wine. :)
