German Berry Cake
Perfect dessert when it's berry season! Quick and easy to make, top it with home-made ice cream if you're feeling adventurous!
Ingredients:
- 1 ½ cup flour
- ½ cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 egg
- 2 tablespoons oil
- Milk
- 1 cup berries
- 1 cup sugar
Directions:
- Preheat oven to 375 degrees.
- Sift together the dry ingredients twice (ho ho!).
- Break the egg in 1 cup measuring cup, beat slightly, then fill measuring cup the rest of the way with milk. Add to the dry ingredients, add oil and mix well. Spread in a greased 8 inch square shallow cake pan and cover with a layer of berries (raspberries, loganberries or blackberries). Sprinkle the final 1 cup of sugar over the top.
- Bake at 375 degrees for 25 minutes and serve hot or room temperature. For an added yum, serve with ice cream!
