Eggless Chocolate Cake
From Hill Farm Inn in Arlington, Vermont
Ingredients:
- 2 ½ cups flour
- 2 cups sugar
- ½ cup cocoa
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 cups water
- ¾ cup oil
- 2 teaspoons vanilla
- 2 tablespoons vinegar
Directions:
- Preheat oven to 350 degrees.
- Mix flour, sugar, cocoa and salt, then set aside.
- Dissolve baking soda in water, then add oil, vanilla and vinegar together and mix well.
- Combine wet mixture with dry ingredients and beat enough to blend thoroughly.
- Pour into greased 9 by 13” pan, then bake for 40 minutes.
