Eggless Chocolate Cake
From Hill Farm Inn in Arlington, Vermont

Ingredients:
  • 2 ½ cups flour
  • 2 cups sugar
  • ½ cup cocoa
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 cups water
  • ¾ cup oil
  • 2 teaspoons vanilla
  • 2 tablespoons vinegar
Directions:
  1. Preheat oven to 350 degrees.
  2. Mix flour, sugar, cocoa and salt, then set aside.
  3. Dissolve baking soda in water, then add oil, vanilla and vinegar together and mix well.
  4. Combine wet mixture with dry ingredients and beat enough to blend thoroughly.
  5. Pour into greased 9 by 13” pan, then bake for 40 minutes.
