Carrot Fruitcake
Finally, a fruitcake your friends and family with look forward to eating!

Ingredients:
  • 1 cup grated carrots
  • 1 cup raisins
  • ¾ cup honey
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • 2 teaspoons margarine
  • 1 ½ cup water
  • 1 ½ cup whole wheat flour
  • 1 teaspoon baking soda
  • ½ cup wheat germ
  • ½ cup chopped walnuts
Directions:
  1. Preheat oven to 300 degrees.
  2. Cook carrots, raisins, honey and margarine in water for 10 minutes, then allow to cool. Mix together all other ingredients and combine with cooked mixture.
  3. Pour into two well-greased small loaf pans and bake for 45 minutes.
