Carrot Fruitcake
Finally, a fruitcake your friends and family with look forward to eating!
Ingredients:
- 1 cup grated carrots
- 1 cup raisins
- ¾ cup honey
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 teaspoon salt
- ½ teaspoon nutmeg
- ¼ teaspoon cloves
- 2 teaspoons margarine
- 1 ½ cup water
- 1 ½ cup whole wheat flour
- 1 teaspoon baking soda
- ½ cup wheat germ
- ½ cup chopped walnuts
Directions:
- Preheat oven to 300 degrees.
- Cook carrots, raisins, honey and margarine in water for 10 minutes, then allow to cool. Mix together all other ingredients and combine with cooked mixture.
- Pour into two well-greased small loaf pans and bake for 45 minutes.
